Cinnamon Spice Muffins with Apple Pie Filling

You all know I love to cook and bake, and with fall in full force around here, I wanted to make something festive. I came up with this recipe and it turned out SO yummy!  Eat them for breakfast, a snack, or dessert. Either way they are the perfect fall treat! And as a bonus, while they are baking your house will smell amazing!
So grab a cute little baking assistant and get started!

Muffins
1/4 cup butter
1/4 cup vegetable oil
2/3 cup granulated sugar
1/3 cup brown sugar
2 eggs
1 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon ground nutmeg
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
1 1/2 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 cup milk

Filling
6 medium apples cored, peeled and chopped (a slightly tart apples works best)
1/3 cup brown sugar
1/3 cup water
2 teaspoons cinnamon
dash cloves
dash nutmeg
1 Tbs cornstarch

Glaze
1 1/2 cups powdered sugar
1 teaspoon vanilla
splash of water

Add a spoonful of muffin batter into 16 lined muffin tins. Then add a spoonful of the cooled apple filling. Top with another spoonful of muffin batter until the tins are 3/4 full. Bake for 15 minutes at 400 degrees. Let cool most of the way on wire racks before adding glaze.

  24. I made these last night for my husband to take to work and share, but then thought they were so good I got up extra early and made some more, not to share ;) I used some apple pie filling that I had canned a few weeks ago. :) The only set back.... you didn't give instructions for how to assemble the muffins. For an enxperinced baker this would be heartbreaking because they look (and are SO SO VERY GOOD) So, here is what I did: 1) cream together the butter, oil and sugars 2) mix in eggs and vanilla 3) in another bowl combine the dry ingredients 4)mix in the dry ingredients to the wet ingredients and add milk. :)
